i don’t believe in thinspiration. i believe in FITspiration! destinee hooker is the middle hitter for the usa women’s national volleyball team. she’s strong, fast, and flexible. seeing her play volleyball is absolutely breathtaking. she inspires me to be the best i can be!

How to make Leftovers Good for You!

I don’t know about you, but when my parents start pulling tupperware containers from the fridge and setting them out on the counter, I groan inwardly. I hate leftovers! Not only does the food lose most of its flavor sitting in the fridge, but there’s almost no variety. I came up with an easy formula to improve the taste and quality of leftovers. substitute whatever you have for the basic ingredients, and add any fresh veggies, nuts, or dried fruit you want! 

The Formula-

  • cooked meat (roast pork, grilled chicken, steak, etc.)
  • fresh garlic
  • extra virgin olive oil (EVOO)
  • your favorite greens (spring greens, spinach, mesclun mix, etc.)
  • dried herbs (we always have dried rosemary in the house, it’s what i use most often)
  • your favorite bottled salad dressing, preferably some type of vinaigrette (if you make your own, that’s even better!)

Drizzle some EVOO in a small saucepan and turn the burner up to medium heat. Finely mince a clove of fresh garlic and saute in the pan until it’s lost that white pallor- don’t burn your garlic! Shred whatever meat you’re using or chop it into bite sized pieces and add to the pan. Sprinkle a bit of your dried herb and just cook until the meat is heated up all the way. Combine cooked meat + garlic with your greens in a bowl. Drizzle a SMALL AMOUNT of your dressing on top. Toss well and enjoy!

(For example, tonight I used leftover pork, dried rosemary, spring greens and spinach, and balsamic vinaigrette. It was delicious!)

5/23/12 intake-

breakfast- egg on a piece of whole wheat toast, banana, orange juice

lunch- spinach+spring green salad with 1/2 tbsp of balsamic vinaigrette and some walnuts, apple 

dinner- yummy salad with leftover pork… i’ll post a recipe! 

snack- nature valley peanut crunch granola bar

*notes- much better today! i ate a full breakfast and felt a lot fuller all day as a result. i really need to try and get more veggies in! and stop sneaking bites of my friends’ junk food :(

5/22/12 intake-

breakfast- nature valley peanut crunch granola bar, gala apple (i was in a rush again!)

lunch- school quesadilla (i open it up and only eat the yummy chicken), bottle of water

dinner- pork roast, big salad with a light drizzling of balsamic vinaigrette, skim milk, a few roast new potatoes. 

snack- *sheepishly* um i may or may not have had some peanut m&m’s… they were handing them out at school! i had to! (she convinces herself desperately). ah well, a few candies isn’t going to break me of all the good habits i’ve worked so hard to cultivate.

*notes- pretty good. i need to start eating a better breakfast! and have the willpower to resist delicious temptations o.O
